I finally found the time to do the update and I can't see where the option is. (it's not displayed in thefox menu/portfolio, nor in portfolio/edit project page)
Do I have to update the child theme as well ? Because I can see on theme page that my child theme in version 1.50 whereas the main theme is version 2.043...
If you don't have any custom php in your child theme linked to the portfolio module then you should be able to see the new option when you are editing the portfolio module.
Go to your page and edit the portfolio module, you should see a field asking if you want to open the link in the current tab or a new page.

However, I can't find a way to make the link open in a new tab. Could you help me ?

Can you also send a link to your portfolio so we can check which portfolio you are using.

The latest update include the option to set if you want the link to open in current or new tab.
It should be ok to update the theme even if you skipped the previous update.
Just in case you can take a backup of the current theme folder you are using.
