I am developing a site where we want the caption for images to be present as the carousel moves between slides. How would we get that content to show up? And if it's not in the carousel, which feature would allow us to show captions? Preferably not on hover.

Unfortunately this is currently not possible.
What you could do is use the Grid plugin, I think there is a layout that allow you to show the media with caption.
How many columns do you want to use for the carousel, depending on this you may also use the Slider revolution.
