Hello Colin, thanks for purchasing Cesis!
First go to Cesis > Header settings > Top bar settings and set the top bar the way you would like it to looks like.
Then you need to activate it for each page / post type
For Page go to
Cesis > Page settings > Header settings.
For post
Cesis > Blog posts settings > Header settings
etc
If you have imported page from the demo they may be using custom settings that overwrite those.
The pages you imported are using custom settings, what you need to do is go edit the page that has problem.
Then when you are editing the page, scroll down until you see the "Page options" panel.
