How can I limit "recent posts" in the footer widget by category?

Hello Jason,
Unfortunately this is not possible without modifying the widget php file directly, currently our widget don't have the category options but this is a good idea, I think we will include it in our next update.

Any way you could build this out at a feature in an upcoming release? I have several sites where I need this functionality.
